What if I told you that I have a recipe that will get your kids to eat a butt load worth of vegetables in one sitting, and they’ll be begging for more? What if I told you that it will also result in them possibly using a knife?

Okay, one of those statements is miraculous – the other is terrifying.

Kids love weird foods, and they love getting to help in the kitchen. It is with this in mind that I give you a simple and healthy food that will knock your socks off and get your kids eating their veggies. Also, if you’re looking to have your kids help in the kitchen, this is a great recipe to do it, because there are jobs for all skill levels.

If you’d like to teach your kiddos some knife skills, then there is plenty of chopping. If they want to peel vegetables, great! If they want to use a can opener, wonderful! If they want to measure with spoons, perfection! Or if they just want to dump all the ingredients in a bowl and stir, it has something for everyone.

Gazpacho – that healthy cold soup that can stir the soul and feed the belly. Kids love the idea of ‘cold’ soup, they think it is weird. This is a simple and quick version of the soup, and it can be on the table in no time (though, it is always better after it sits for a little while).

Super Easy Gazpacho

1 Can of no salt added diced tomatoes WITH JUICE
1 Can of no salt added tomato sauce
2 Cups of water
1 Tbs Olive Oil
1/3 cup balsamic vinegar
3 tsp salt
1 cucumber
1 red onion
1 green bell pepper
1 yellow bell pepper

• Mix the can of diced tomatoes, tomato sauce, water, olive oil, vinegar, and salt in a large bowl and combine well.

• Peel and deseed the cucumber and dice.

• Dice the entire red onion

• Dice the peppers

• Combine. No really. It is that easy.

Parents might want theirs with some hot sauce and kids might want theirs with grated cheese. But either way, it is a salad in a bowl and you’ll get your kiddos to eat, eat, eat it!
